Parmesan-Carrot Risotto

Our family loves risotto.  We eat it all the time, especially in this cold winter weather.  What I love  most about risotto is that you can add anything to it, making fun combinations of flavors.  This one is directly from Martha’s ‘Everyday FOOD’ magazine, and is fabulous.  It’s pleasently sweet from the carrots.  And as Zak gets older is eye sight is no longer perfect, so this meal put off the dreaded first visit to an eye doctor by a few weeks!

Sauteed Chicken with Tomato Relish and Spinach

This is basically chicken picatta with a twist.  A simple tomato relish adds a blast of flavor and color.  Served with sauteed spinach, this is a complete meal that is quick.  Zak was working late the night I made this, so I did all the prep work during their nap time.  This allowed me to simple sautee the chicken and spinach and hold Ellie.  She’s goofy like that.  She like to be held from 4:30 to 5:30.  Pretty much the whole time.  And that’s when I usually cook dinner.  Thank goodness, Zak keeps her comforted most nights as I work in the kitchen.  I’ve found it to be nearly impossible to chop one handed, while holding a squirmy baby in the other arm.  It can’t be safe, and those little toes of hers are just so darn cute, it would be a shame to lose them to a sad chopping parsley incident.

So, let’s get to work on this completely baby toe free chicken dish!

Start with your ingredients:

Drain the juice of a can of diced tomatoes and add chossed parsley, olive oil, the juice of one lemon, and capers:

Steak and Onion Sandwiches

I am a subscriber to ‘Everyday FOOD’, a Martha Stewart magazine.  I have every single issue, with the exception of the very first one, taking up an entire shelf in one of my prime kitchen cabinets.  It’s worth giving up the space, because I love that they are always at my fingertips.  Each weekend we plan our meals for the entire week, make a detailed list, and hit Trader Joe’s.  As Zak and I prepare the weekly menu I thumb through past issues and discover or rediscover a bounty of meals that are quick, easy, homemade, and most often delicious.  I use these magazines far more often than any of the fabulous cookbooks I own.  The January/February issue included seven dinners, all healthful and affordable.  Over the week or so I’ll profile the five meals we ate.

First up is a steak and onion sandwich and a simple salad.

First, gather your ingredients:

No, this is not the most expensive cut of meat, it’s only top round.  But it is simply seasoned and cooked, making the flavor plentiful.  You’ll save a few dollars, but your tastebuds won’t know the difference.

Poke holes into the steak to allow the flavors of the marinade to soak into the meat:

Pasta with Pepper and Really Good Cheese

This one is going to be quick and to the point.  You see, I am sitting in a coffee shop, all by myself, enjoying a fabulous cup of some fancy caramel coffee drink.  It has way too much whipped cream and a caramel drizzle.  Zoe is at preschool and Ellie is with a sitter.  And I’m all by myself.  I don’t want to waste a single moment of this alone time, hence a short pasta post.

Here are the ingredients to this simple, simple pasta dish:

The green stuff is parsley, the cheese is reggiano parmesan and that’s a touch of cream in the black dish.
