I’m guest posting today in an attempt to win the award for most hypenated recipe. This was a great meal, not as great as your local Chinese carryout, but probably a lot better for you. Start with a copy of the reciepe from Everyday Food and all of the things shown below.
Begin by preheating your cast iron skillet (you have one by now right?) then you can commence mixing up the sauce in a small bowl. As is traditional for this meal the recipe called for pineapple juice, but we didn’t have any on hand so I substituted pear juice instead.
Then add the vinegar,
soy sauce,
corn starch,
water,
salt,
and pepper.
Then whisk it, whisk it good.
By now your skillet should be good and hot, so go ahead and add a little oil to season it and reduce the heat to medium high.
Slice the pork into thin strips and cook just until brown.
Remove the pork from the skillet and add the scallions and peppers, let them cook until just soft.
Add the pork, broccoli, and pineapple to the pan and let the whole thing finish cooking.
Finally, finish it with the sauce you made
and serve with rice and extra pineapple.
