Tuesday, December 2nd, 2008This is obviously the best time of year for soup. And, goodness,do love soup. I love making it and eating it. The prep work is so rewarding. The chopping. The dicing. The actually making it is so creative. The spicing. The tasting. The adjusting. And then eating it. Always fulfilling.
I found soup to be one of the best things about that cleanse I did. I ate a bowl of soup at least once a day. And the kids and husband didn’t even realize or care they were eating vegan.
This potato soup was delicious and so flavorful. I promise you will all love it. Don’t get all freaked out by the veganess of it!
Start by washing four large potatoes or a combination of your favorite types:
(Yes, those are Ellie’s toes in the picture. If you need to hold a baby while cooking, be sure not to chop off the little piggies!)
Dice the potatoes, a large purple onion, and a big bunch of broccoli:

Tuesday, February 19th, 2008With the exception of hanging out with the family, my passion is food. I love to cook, bake, and obviously, eat. Chopping, sauteing, mincing, measuring, whisking, and mixing all bring me great joy so I decided to start this little food blog.
